The Salad You Deserve: Salade Nicoise

The Salade Nicoise is a famous culinary specialty of Nice now spread worldwide.It’s made with raw vegetables: tomatoes, peppers, red onions, spring onions, fava beans, celery, small purple artichokes, cucumbers, boiled eggs, anchovies, tuna, olive oil and olives Nice.


It is one of the main entrances proposed in Provence, but can in itself constitute a meal in itself. The original recipe is tomato, salted three times, and always includes: tomatoes, peppers or green (preferably in variety salad peppers) or red, chopped, red onion or spring onion, and a protein (egg or anchovies hard or tuna). Tuna, in the early nineteenth century, was expensive and was only used on holidays.
